Lotus Biscoff Cheesecake
Ladies and gentlemen, I give you the ideal dessert- the Lotus Biscoff Cheesecake! Perfect for finishing off a meal (or starting one tbh), the Lotus biscuits have a crunchy, caramelised taste which goes well with a creamy cheesecake. And I love cheesecake! The Three Windmills, Newbury

Soft-baked Pretzels
Okay not going to lie, I’ve never really given much thought to pretzels. I predominantly thought they were a savoury snack. So when I received my latest baking box from BakedIn, I was intrigued to find that this month’s bake was going to be soft-baked pretzels. Not only that, but these were sweet, covered in cinnamon and designed to be dipped into melted chocolate. Pretzels were so fun to make- I would never have baked something like this usually, but they were easier than I thought they would be. I ate mine fresh out of the oven- they were delicious and made me feel like I was in continental Europe…

Simply scrumptious scones
I absolutely love afternoon tea (as anyone who follows this blog will know). And what is no afternoon tea complete without? Scones! Now, I feel that scones are one of those foods that everyone has their own recipe for- however there seems to be a huge amount of variations online. Therefore, you need to try a few to find the perfect one. I tried out Mary Berry’s afternoon tea recipe for VE Day. These scones were the perfect way to celebrate the occasion and required a smaller amount of each ingredient- ideal if you’re having trouble getting flour. Ingredients 250g/9oz self-raising flour 1 rounded tsp baking powder 40g/1½oz softened butter…

Eggless Sponge Cake
Being in lockdown presents many challenges, not least attempting to shop for groceries. With online deliveries being hard to come by and a shortage of food on the shelves, a lot of people are finding themselves having to come up with alternatives for cooking and baking. Last weekend I made this yummy eggless vanilla sponge from a recipe I found online. I was low on eggs and was pleased to find a way to bake without using any. This is a great sponge cake without eggs for when you are struggling to find eggs or do not like eggs. Recipe below (courtesy of Mummy’s Home Cooking). I tweaked mine a…

Foodies do the West Coast of Canada
Autumn is my favourite time of the year. I’ve written countless blog posts about it and save my sweater collection all year round, ready for the Autumn months. This year, I started my Autumn off by spending it in the Canadian Rockies. I’ve really wanted to go there for sometime. After a nine hour flight, I arrived in Banff, to be greeted by crisp air and the sights of lush meadows and tall peaks. I’ve visited Canada before, back in 2012, and it is one of my favourite places. That time, I was lucky enough to visit the East Coast and posted a blog about my culinary experience here. An overarching…
