Happy Friday! A little while ago I was inspired to make this yummy toffee apple and salted pretzel rocky road. It’s ideal for when you just need something sweet. Here is the recipe (by John Whaite) if you want to give it a go this weekend! Rather Lovely Raspberry Ripple Cake
Over the last few months, I missed going out to eat cake so much I decided to make it myself. I baked this delightful raspberry ripple- recipe and ingredients courtesy of BakedIn. Ingredients: 130g caster sugar 195g self-raising flour 1 tsp baking powder 75g granulated sugar 130g icing sugar 2.5g freeze dried raspberries 4 medium eggs 195g cubed unsalted butter, at room temperature 120g raspberries 350g mascarpone You will need: 3 x greaseproof circles Butter measure 2 x wooden skewers 3 x 18cm round tins Small saucepan Sieve Method: 1. As part of a bank holiday weekend project, I made these carrot cake whoopie pies to enjoy. Going bananas for banana bread
The accepted wisdom is that if you haven’t baked banana bread whilst being in lockdown, are you even doing it right? But it’s not surprising that banana bread has been so popular whilst quarantining- it is utterly delicious, the natural sweetness of the fruit lending itself perfectly to baking. Eggless Sponge Cake
Being in lockdown presents many challenges, not least attempting to shop for groceries. With online deliveries being hard to come by and a shortage of food on the shelves, a lot of people are finding themselves having to come up with alternatives for cooking and baking.
