Sweet Treats and Seafood in Brighton
As lockdown continues to ease across the UK, I thought I’d finally get around to writing a post on my trip to Brighton- or rather, the food I ate on my trip to Brighton. This trip was quite a while ago now, so my memory is unclear on a few things. Therefore, I decided to focus more on the sweet things I enjoyed- they’re more interesting anyway. So, let’s start with these super scrummy ice creams I had at Bill’s and Donatello. So light and creamy. One morning, I had pancakes with blueberries and cream for breakfast, which felt very decadent: Not the healthiest start to the day! But my…

Eating My Way Through London: Pasta at Vapiano
I was looking through old pictures on my phone and came across some photos of my visit to Vapiano last year. I’m not obsessed with pasta (okay, I am), but pasta is great to photograph. Is that just me? Anyway, Vapiano is a canteen- style Italian restaurant that caters to the ‘swipe and go’ generation. I think it’s worthy of a mention on this blog as the pasta is fabulous. And they offer takeaway- ideal for these Covid times. There’s a few branches around London, so if you’re near one, it’s worth paying a visit. And if you’re not…put it on the list of places to visit in London when…

Eating outside again (finally)
As the lockdown restrictions have eased, it’s been so good to be able to enjoy food and drink at a restaurant or cafe outside. I have been off work over the last week whilst transitioning between jobs, which has given me additional time to really make the most of it. Here is a round-up of some of the places I visited. The Paper Mill, Apsley It was lovely weather at the weekend so my boyfriend and I decided to celebrate by visiting a charming canal-side restaurant near where he lives. We both had beefburgers, but I could only get my hands on the brownie sundae by ordering it from the…

Delicious Cinnamon Buns
Even though I’ve been into baking for a few years now, I’ve never tried baking cinnamon buns before. Which is a surprise because I love them! Receiving the Cinnamon Buns kit from Bakedin gave me the opportunity to try my hand at making some. My favourite part was when the house filled with the aroma of the cinnamon buns baking- bliss! P.S. Everyone who sampled one of these buns enjoyed them. Ingredients • 1 medium egg • 115g unsalted butter (50g + 50g + 15g) • 180ml milk (165ml + 1 tbsp) • 1 tsp salt • 250g/9oz plain or wholemeal plain flour, plus extra for dusting • 1½ tsp fast-action yeast •…

Easy Chicken Curry
I’m completely caffeinated on coffee as I write this. Knew having two cups wasn’t the best idea haha! The takeaways near me aren’t up to much, so I thought I’d try to create my own Indian feast at the weekends. This chicken curry is yummy and easy to make- a pretty good substitute for a takeaway I think. Ingredients Method Recipe courtesy of BBC Good Food

Pancakes with Chocolate and Strawberries
A bit late to the party, but can finally get around to sharing a picture of these delightful pancakes that my boyfriend arranged to be sent to me for Pancake Day. Despite lockdown, I loved the fact that we can still do nice things for each other (I sent pancakes to him in return). What toppings do you like on your pancakes?

Comforting Chicken Stroganoff
I was in the mood for something tasty and warming a few weeks ago and this flavoursome chicken stroganoff I made was just the ticket. It is is a comfort-food classic- ideal for a cold winter night, or just when you want to feel cosy. INGREDIENTS INSTRUCTIONS Do you know what to serve this with? I went for rice but apparently mashed potato is a popular side!

Pear and Frangipane Tart
I made this absolutely yummy pear and frangipane tart a little while ago. I’m not usually a fan of fruit-based puddings, but this was wonderfully sweet, with just the right amount of sharpness. It was the ideal Autumn/ Winter sweet treat. I froze some of mine to make it last longer. Prep time: 30 mins Ingredients 215g plain flour 170g unsalted butter (110g frozen for at least 3 hours and coarsely grated, and 60g softened) ¼ tsp salt 60g caster sugar 60g ground almonds 60g caster sugar 10g plain flour 1/16th tsp madagascan vanilla 20g plain flour (for dusting) 5g icing sugar 45ml cold water 2 medium eggs 2 large…

Cosy Winter Afternoons With Cake
Happy New Year! I hope you’ve all been enjoying the time between Christmas and the end of 2020, and eating your body weight in sweet treats. I have- after all someone has to finish the Christmas goodies! Here is a delicious Victoria Sponge I enjoyed earlier this week, courtesy of The Lounge, a local coffee shop. Lazy winter afternoons with cake and tea are my fave. And as you can see, I got a friend to enjoy it with me 😊

Supporting the Homeless with Mince Pies
These almond frangipane mince pies were a real treat. Delightfully festive, with a twist on a traditional favourite, they taste great with a glass of mulled wine (or mulled wine tea). However, what makes them extra- special is that the ingredients were supplied by vegan bakery Poster Bakes, in partnership with homelessness charity The Connection at St Martin’s. Proceeds from each £12 box sold helps feed people sleeping on London’s streets this Christmas. So it was a lovely way to help out those who need it. The kit contained everything I needed to make these delicious festive treats. They are vegan-friendly and can fit straight through your letterbox. One of…
