Okay not going to lie, I’ve never really given much thought to pretzels. I predominantly thought they were a savoury snack. So when I received my latest baking box from BakedIn, I was intrigued to find that this month’s bake was going to be soft-baked pretzels. Carrot Cake Whoopie Pies
Have you ever tried Whoopie Pies? I hadn’t either, before yesterday. And now I wonder where they’ve been all my life! As part of a bank holiday weekend project, I made these carrot cake whoopie pies to enjoy. I absolutely love afternoon tea (as anyone who follows this blog will know). And what is no afternoon tea complete without? Scones! Now, I feel that scones are one of those foods that everyone has their own recipe for- however there seems to be a huge amount of variations online. Therefore, you need to try a few to find the perfect one. I tried out Mary Berry’s afternoon tea recipe for VE Day. Going bananas for banana bread
The accepted wisdom is that if you haven’t baked banana bread whilst being in lockdown, are you even doing it right? But it’s not surprising that banana bread has been so popular whilst quarantining- it is utterly delicious, the natural sweetness of the fruit lending itself perfectly to baking. Eggless Sponge Cake
Being in lockdown presents many challenges, not least attempting to shop for groceries. With online deliveries being hard to come by and a shortage of food on the shelves, a lot of people are finding themselves having to come up with alternatives for cooking and baking. Last weekend I made this yummy eggless vanilla sponge from a recipe I found online. I was low on eggs and was pleased to find a way to bake without using any.
